Bunny Kisses

Put some Hershey Kisses or Hugs in a plastic baggie (or use chocolate chips- they look like minikisses anyhow) and attach the following poem:

This cute little bunny has hopped all day
Been delivering delivering baskets for the holiday.
His paws are so tired and his little nose itches.
He left you something special-something to fill all your wishes.

Bunny Poop

Put chocolate-covered raisins, mini marshmallows, jelly beans or fruit loops in a plastic bag. You can also try malted milk balls in little baggies tied with curly ribbon and set these in little miniature easter baskets.

Attach the following poem:

The Easter Bunny came last nite
and left this little scoop,
Because you weren't so good this year,
You're getting Bunny Poop.

Or, try this poem:

The Easter bunny was smiling,
Spring was in his hop.
He had a basket full of candy,
You were the next house on his stop.
But he saw you being naughty
and his poor ears began to droop.
So instead of eggs and candy....
He just left this bag of poop ! ! !

The Jelly Bean Prayer

RED is for the blood He gave.
GREEN is for the grass He made.
YELLOW is for the sun so right.
ORANGE is for the edge of night
BLUE is for the sins we made.
WHITE is for the grace He gave.
PURPLE is for His hour of sorrow.
PINK is for our new tomorrow.
A bag full of jelly beans colorful and sweet,
Is a prayer, is a promise, is a special treat.

JELLYBEAN SOUP

We're camping out,
What a lucky group.
We're going to dine
On jelly bean soup.

We'll cook those beans
Till they're red hot.
Add M&Ms
To fill up the pot.

We'll eat that soup
And when we're through,
We'll have our tasty
Marshmallow stew.

We'll pick our teeth
With a Tootsie Roll.
Tomorrow it's
Chocolate casserole!

Peanut Butter Easter Baskets

1-1/4 cups (300 mL) firmly-packed brown sugar
3/4 cup (175 mL) creamy peanut butter
1/2 cup (125 mL) Crisco Shortening
3 tbsp (45 mL) milk
1 tbsp (15 mL) vanilla
1 egg
1-3/4 cups (425 mL) all-purpose flour (plus 4 tbsp/60 mL divided)
3/4 tsp (3 mL) salt
3/4 tsp (3 mL) baking soda/

Frosting:

2 cups (500 mL) icing sugar
1/4 cup (50 mL) Golden Crisco Shortening
1-2 tbsp (15-30 mL) milk
Food colouring
Decorations (your choice) jelly beans, chips, decorating gel, raisins, candies, etc.

1. For baskets, combine brown sugar, peanut butter, shortening, milk and vanilla in large bowl.  Beat at medium speed of electric mixer until well blended.  Add egg.  Beat just until blended.

2. Combine flour, salt and baking soda.  Add to creamed mixture at low speed.  Mix just until blended.

3. Divide dough into quarters. Wrap each quarter of dough with plastic wrap.   Refrigerate at least 2 hours.  Keep refrigerated until ready to use.

4. Cover the outside of six 3-inch (7.5 cm) wide x 2-inch (5 cm) tall ovenproof bowls with aluminum foil.  Press aluminum foil securely to sides of bowls.  Grease foil with shortening.  Preheat oven to 375°F (190°C).  Place sheets of foil on countertop for baskets.

5. Spread 1 tablespoon (15 mL) of flour on large sheet of waxed paper.   Place one quarter of dough on floured paper.  Flatten slightly with hands. Turn dough over and cover with another large sheet of waxed paper.  Roll dough to 1/4-inch (6 mm) thickness.  Remove top sheet of waxed paper.  Place a 7-inch (18 cm) round plate on dough.  Cut circle with knife using plate as guide.   Place bowls upside down on ungreased baking sheet.  Transfer dough circles to foiled bowl with large pancake turner.  Form to sides of bowl with fingers.  Roll out remaining dough.

6. Bake one baking sheet at a time at 375°F (190°C) for 7 to 8 minutes, or until set and just beginning to brown.  DO NOT OVERBAKE.  Cool 2 minutes on baking sheet.  Remove cookies to foil to cool completely.  Remove cookies from the molds.

7. For frosting, combine icing sugar, shortening and vanilla in medium bowl.  Beat at low speed, adding enough milk to make good spreading consistency.   Divide frosting into 3 or 4 small bowls.  Add different food colour to each bowl one drop at a time until desired shade is reached.  Decorate baskets with coloured frostings and assorted decorations.

Makes: About 6 cookie baskets

Edible Bird's Nest

This fun craft is not only adorable when done, but it's tasty too! Sit the kids down to make this fun spring project. Be sure to make extras for friends and family.

You will need:

Chow mien noodles
chocolate chips or brick chocolate
Jelly beans
candy coated chocolate eggs
marshmallow chicks
peanut butter
wax paper
paper plates (colored plates optional)

Directions:

1. Place squares of wax paper onto to individual plates.  Put chow mien noodles in a large bowl.  If using brick chocolate, break into pieces.  Melt chocolate chips or pieces in the microwave, or over low heat on stove, just until melted.  Pour melted chocolate over chow mien noodles, mix together to coat.

2. Place mounds of chocolate/chow mien mixture onto several plates (on top of waxed paper).  Have children form the mixtures into nests.  Be sure the chocolate has cooled, but don't wait too long or it will harden!

3. Using peanut butter as an adhesive, "glue" down the jelly beans and candy coated chocolate eggs inside the nest cavity.  "Glue" marshmallow chick on the edge of or inside of the nest.

4. These make fun gifts from kids to their friends, teacher and family members.  You can also make these nests at birthday parties as a fun and edible take home party favor.

Carrot Cake

- 1 cup Oil
- 1 cup Sugar
- 1 cup Brown sugar
- 1 teaspoon Vanilla
- 4 per serving Eggs
- 2 cups Flour, whole wheat
- 1/3 cup Dry milk
- 1 teaspoon Baking soda
- 1 teaspoon Salt
- 1 teaspoon Baking powder
- 2 teaspoons Cinnamon
- 3 cups Carrots; shredded
- 1 cup Walnuts; chopped

In large bowl, blend oil and sugars on low until well mixed.  Add vanilla. Beat in eggs, one at a time, blending well after each addition.  Stir together dry ingredients and add to egg mixture until well blended.  Stir in walnuts and carrots by hand.  Pour batter into well greased and floured 10" tube pan or fluted pan.  Bake at 350f for 50-60 minutes.  Cool in pan, then top with powdered sugar or frosting of your choice
